Cannabis-Infused Buttermilk Pancakes Recipe
What breakfast food could be more delicious than a warm stack of buttermilk pancakes with some local maple syrup and a pad of butter? It can be an even better start to a morning when it is infused with cannabis oil. This recipe starts with a dry pancake mix that can be stored and used again for up to 3 months, making it easy to enjoy these pancakes again and again! For this recipe, you can use our Edible Cannabis Oil to infuse butter for the pancakes. If desired, you could also infuse your own butter and add it to your pancakes after making them. The dose of each pancake will vary depending on the size. For a more consistent dosage, use a measuring cup to pour your batter so the pancakes are all the same size. Yield: 10-20 Buttermilk Pancakes
If you use 400mg of Edible Cannabis Oil this recipe will make (10) 40mg or (20) 20mg pancakes.
Ingredients
Pancake Dry Mix (this will make more than you need):
- 6 cups All-purpose Flour
- 1 ½ teaspoon Baking Soda
- 1 tablespoon Baking Powder
- 1 tablespoon Kosher Salt
- 2 tablespoons Sugar
To Make Pancakes:
- 2 eggs, separated
- 2 cups buttermilk
- 4 tablespoons melted butter
- 2 cups pancake dry mix(recipe above)
- 1 stick butter (for greasing the pan)
- 2 cups fresh fruit or chocolate chips (if desired)
- 400mg Edible Cannabis Oil
Directions
To Make Pancake Dry Mix:
- Combine all ingredients in a bowl and whisk together.
- Store in an airtight container for up to 3 months.
To Make Pancakes:
- Heat and electric griddle or fry pan to 350°F.
- Melt butter and add edible cannabis oil. Mix thoroughly.
- Whisk together egg whites and buttermilk.
- In a separate bowl, whisk together the egg yolks and the melted/infused butter.
- Combine the buttermilk mixture and the egg yolk mixture. Whisk until fully combined.
- Pour liquid ingredients on top of the pancake mix. Whisk enough to bring batter together, but not enough to remove all the lumps.
- Lightly butter the griddle.
- Ladle batter onto the griddle and add fruit or chocolate if desired.
- When bubbles begin to set around edges and griddle side of pancake is turning golden brown, flip the pancake and continue to cook for another 2-3 minutes or until it is ready.
