Cannabis-Infused Cheese Crackers
Did you know that you can make homemade cheese crackers that are just like the store-bought ones? Plus, with this recipe, you can infuse them with cannabis oil! It’s pretty simple if you use our Edible Cannabis Oil, which comes in an easy-to-use oral syringe. This recipe can make around 100 cheese crackers that would each be around 4mg. You will want to make them all a consistent size, so you have a more accurate idea of the dose. You can calculate the dose by dividing 400mg by the number of crackers. These crackers are delicious, so be careful with how many you consume. If you like them a lot, try making an infused and non-infused batch so you can consume your desired dose and then have more delicious crackers to snack on. Yield: ~100 crackers
If you use 400mg of Edible Cannabis Oil, this recipe will make ~100 4mg crackers.
Ingredients
- 8 ounces Freshly Shredded Extra-Sharp Cheddar Cheese (you can buy pre-shredded but fresh works best)
- 1/4 cup Butter, (1/2 a stick), softened
- 1 teaspoon Coarse Sea Salt
- 1 cup All-Purpose Flour
- 2-3 tablespoons Cold Water
- 400mg Edible Cannabis Oil
Directions
- Preheat oven to 375°F. Line two baking trays with parchment paper and set aside.
- Melt the butter and fully mix in the edible cannabis oil, then allow the butter to resolidify.
- Add the cheese, butter, salt, and flour to the bowl of a standing mixer. Use the paddle attachment and stir to combine until the mixture is crumbly. Add 2 tablespoons of water and mix until a dough forms (this may take a minute or so). If needed, add an additional tablespoon of water.
- Divide the dough into fourths and roll into logs about 1 inch in diameter. Wrap the logs of dough in plastic wrap and chill in the refrigerator for one hour.
- Cut 1/8 inch thick slices off the logs and spread on the baking trays with space between the crackers. They will puff up and spread a little while baking.
- With a toothpick, make holes in the centers of each cracker. Lightly spray with pan spray and sprinkle with coarse salt before baking. Bake until the crackers are crispy, 15 to 20 minutes. Watch to make sure the crackers do not overcook and brown too much!
- To re-crisp leftover crackers, toss on a baking sheet and heat in the oven or toaster oven for a few minutes.
